Nick Sinclair, the Surrey-born chef is returning to his roots back at the Emlyn Restaurant in Box Hill, Dorking after an absence of four years, determined to make his mark on the Surrey food scene.
Passionate about supporting local and regional suppliers where he can, Nick draws inspiration for his menus from the beauty of the surrounding countryside: “I look out of my windows onto Box Hill itself as Emlyn’s is situated literally At the Foot of Box Hill – what can be more inspiring than that?”, he says.
Returning now to the Emlyn Restaurant, Nick has brought a hand-picked team along with him, determined to grow together to make their mark in both Dorking and the wider county as a whole. As Nick says, “There is unlimited potential here. Surrey is in effect an agriculture economy and we want to work with the best of the local producers, showcase their products and grow their visibility together. We have taken the first step in establishing our kitchen garden and will have four beds over around ¼ acre of land here at the hotel. Our plans are to start bee-keeping here as soon as we can too and who knows what else we might find ourselves doing!
When the Emlyn invited me to return, I leapt at the opportunity. We have a passion for good food, cooked to perfection and we love the surroundings. We cook everything we can in-house on a daily basis, including baking our own bread, smoking our own fish, making our own ice-creams and patisserie. Eventually, we will grow some of our own vegetables and herbs and will become beekeepers with Emlyn Honey. There’s no limit to what we can achieve here.”
