After a four year absence, Surrey-born and bred Chef Nick Sinclair is back and determined to make his name in his home county with the Emlyn Restaurant in Dorking, Surrey.
His love of food started with his food-loving parents and after a culinary journey that has seen him travel the world, he has returned back home. Today, at the Emlyn Restaurant, he takes inspiration from the high quality local and regional produce available to produce adventurous dishes of classical flavours, enlivened by modern cooking techniques. Nick’s unpretentious food is pared down, stylishly presented and usually is comprised of three or four complementary elements combining to bring the food alive.
He’s not alone – he’s brought with him a young team of chefs with whom he has worked and nurtured for the past two to three years. When Nick returned to Box Hill, they came with him, determined to stay together and achieve something really special in Surrey. Says Nick, “We work on the menu as a team, bringing in the best seasonal produce for that week, choosing one key element. We then decide together which two or three other ingredients would work well to complement this first choice and which cooking techniques to use to bring out the best flavour and textures. Our food is not overly complicated – we let these ingredients shine and work with each other, one not overpowering the other. The key is in the balance between texture and flavour.
“We continually re-evaluate what we are doing, checking that each element of the dish is required and has a role to play, also deciding on the best presentation to showcase the dish. Sometimes an apparently simple recipe might have gone through five cooking techniques before reaching the table.”
Nick’s brigade cooks everything they can in-house on a daily basis, including baking their own bread, smoking their own fish, making their own ice-creams and patisserie.
As Nick says, “There is unlimited potential here. Surrey is in effect an agriculture economy and we want to work with the best of the local producers, showcase their products and grow their visibility together. We have taken the first step in establishing our kitchen garden and will have four beds over around ¼ acre of land here at the hotel. Our plans are to start bee-keeping here as soon as we can too and who knows what else we might find ourselves doing!”
So now that the sun has started to shine, why not head over to Box Hill, stopping off for a tasty little number at the Emlyn Restaurant. I think you might enjoy it – we certainly did, and have returned on numerous occasions since! The two course set lunch starts at GBP19.95 and a two-course Sunday lunch is GBP24.95.
